Whole Grain Salad with Red Wine Vinaigrette

For the salad:

  • 1 sweet potato, peeled, diced
  • 2 cups bulgur wheat, soaked
  • 1 cup raw kale, shredded
  • 2 Tbsp. sunflower seeds

  1. Preheat oven to 425°F. Toss diced sweet potatoes with olive oil and salt. Roast for 25-30 minutes, until tender.
  2. Toss the warm sweet potatoes with the bulgur wheat, kale, and sunflower seeds.
  3. Whisk together the dressing ingredients and drizzle over salad. Toss until coated and serve room temperature or chilled.
