Orange-Chili Glazed Ham with Marsala

  • 1 bone-in spiral cut ham
  • ½ bottle Holland House® Marsala Cooking Wine
  • 1 Tbsp. orange zest
  • 1 cup orange juice, freshly squeezed
  • ½ cup brown sugar
  • 2 each, red Thai chili pepper
  • ½ tsp. black peppercorn
  • 4 each, cloves
  • ¼ tsp. pepper, freshly ground

  1. Combine all ingredients, except ham, in a medium saucepan over high heat, bring to a boil and reduce heat to simmer.
  2. Simmer liquid for 30 minutes or until it is thick and syrupy like honey. Set aside.
  3. Preheat oven to 300°F. Place unwrapped ham in a large baking pan cut side down. Tent with foil and place it in the oven for 12-15 minutes per pound or to an internal temperature of 145°F.
  4. Increase heat to 350°F, uncover ham and brush with glaze every 10 minutes for the last 20 minutes of cooking.
  5. Cook to an internal temperature of 145°F.
