Grilled Vegetable Kabobs with Spicy Citrus Marinade

  1. To prep the vegetables: cut bell peppers into 1-inch pieces, slice zucchini into ½ inch thick rounds, remove the stems from the mushrooms and dice the onion into 1-inch pieces.
  2. Combine all the vegetables and remaining ingredients in a large bowl or resealable bag. Marinate for at least 20 minutes.
  3. Skewer the vegetables, making sure they are evenly spaced. Grill until tender, flipping occasionally, about 10-12 minutes.
